Sundried Tomato Muffins



A breadlike muffin which has the characteristic ingredients of mediterranean cuisine. Once, a friend of mine who tasted it right after I took them from the oven; said that the taste reminds pizza. Well I do not know, but definitely the smell coming from the oven is truly irresistable while you are cooking them. The recipe is from the website of Betty Crocker products. The recipe contains little salt because of the saltiness of tomatoes and parmesan. I used kalamata olives instead of pimiento.
  • 1 cup milk
  • 1/4 cup olive oil
  • 1 egg
  • 2 cups all purpose flour
  • 1/4 cup shredded parmesan
  • 1 tbs chopped fresh basil or 1 tsp dried basil
  • 2,5 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sun dried tomatoes in olive oil
  • 1/4 cup pimiento olives
  • additional parmesan for topping
Start by heating your oven to 200C and grease the muffin pan. In a shallow bowl combine milk, olive oil and egg. Add flour, shredded parmesan, basil, baking powder and salt and stir just until the flour moistened. Do not stir too much or the result will be rubbery, hard muffins. After adding chopped tomatoes and olives, stir once more and fill the muffin cups. Sprinke with additional parmesan and put in the preheated oven. It will take 18-20 mins to have amazingly smelling hot small bread/muffins. Remove immediately from the pan and leave to cool on wire rack. Serves 12 and 150 calories each. Bon apetito!

    Thank you for posting the recipe in English as well. Tomorrow I will go and buy a tart dish for Jasmina (she celebrates Christmas on the 7th, and she has kindly invited me for dinner on Sunday) since she loves my tart recipes, especially the torta della nonna. So at the same time I can make myself a present and finally buy a muffin tray - and I am sure that your recipe will be one of the first things to try when welcomming Herbert home again :-) Thanks for sharing, Tülin, and the irrestible scent comes all the way to Vienna....
